Mango, Red Onion and Tomato Salsa
1 medium red onion, peeled and finely chopped
1 tbsp red wine vinegar
1 large mango
2 beef tomatoes, finely chopped
2 tbsp finely chopped fresh cilantro
3 tbsp smooth mango chutney
1 tbsp sunflower oil
Salt and freshly ground black pepper
Put the onion in a bowl and mix in the vinegar. Peel the mango and slice down either side of the smooth, flat central stone. Discard the stone and chop the flesh into small pieces; place in the bowl. Mix the remaining ingredients, cover and chill until required.
